This course is suitable for anybody who is new to HACCP, those who wish to understand how HACCP requirements relate to their day to day role, and for members of the HACCP team (including those representing engineering and production and other non technical roles).
The course works systematically through the 7 Principles/12 steps of Codex HACCP in an interactive/workshop based manner, ensuring that the trainees are fully engaged and have the opportunity to put what they are learning into practice.
Who should attend?
The course is aimed at anyone who takes part in their company’s HACCP and pre-requisite planning, implementation and monitoring programme. The course is also very useful for trainers who teach level 2, 3 and 4 food safety courses. There is no examination on completing this 1 day course.
As well as fully explaining the CODEX 12 Steps and 7 Principles, the course gives focus to the importance of pre-requisite programmes which support the HACCP plan, describes a range of Critical Controls Points commonly identified within the food industry and illustrates different formats for HACCP documents and risk assessment.
