Since the Horsegate scandal of 2013, recognition of the potential for food fraud and the necessity for vulnerability risk assessments throughout the food supply chain has become more important, resulting in development of risk assessment techniques and the creation of Vulnerability Assessment Critical Control Point (VACCP) programmes.

The course reviews the background to vulnerability assessment and the requirements of the BRC Global standard for food relating to vulnerability assessment. Tools to asset support the development of risk assessment are introduced with group/workshop exercises to supplement learning.
